Hrechanyky, hrechanyk (sing.) is a dish made of buckwheat with other ingredients (minced meat, mashed potatoes, and fried vegetables) that historically has been very popular in Ukrainian and Polish cuisine.

In Ukrainian cuisine, hrechanyky are often served pre-fried and then baked with tomato or sour cream sauces.

In ancient Ukrainian cuisine, hrechanyky are also a dish in the form of pancakes, or fritters and are made from buckwheat flour, but not groats.

Origin and characteristics[edit]

The dough for buckwheat pancakes was prepared with bread leaven or yeast, adding at least a quarter of rye or wheat flour, an egg, and whey (milk with water). It is usually cooked with some kind of minced meat (chicken, pork, or veal). However, it can also be a lenten dish. It was considered as an individual dish or as a side dish. People ate it with cracklings, milk, yogurt, or sour cream.

Meat filled hrechanyky[edit]

Take the buckwheat groats (500 g) and rinse them with cold water. It can also be dried in a frying pan. Then boil 2 cups of water, add a little salt and add buckwheat. Cover the pan with a lid and bring to a boil. Cook at a moderate boil until doneness (up to 15 minutes). There should be no water in the finished buckwheat. If the groats are not yet fully cooked but there is no more liquid, you can add some extra boiled water (1/3 cup) and cook for a few more minutes. After that turn off the stove and cover the pan with a towel for 10-15 minutes. The buckwheat will absorb the excess water and get cooked. Let the cooked buckwheat get to room temperature. While the buckwheat is hot, you can put a piece of butter and mix with the porridge.

Mince one onion with the meat and mix well. You can also add carrots (there is a variant that carrots and onions are stewed or fried before adding). Chop the second onion finely. Then add the eggs, salt and spices to the minced meat and mix well. Add boiled buckwheat to the minced meat and mix. Make patties (or large pancakes) from the minced meat and roll them in flour. Lenten hrechanyky[edit]

Boil one cup of buckwheat in 2 cups of water. Boil the potatoes in their jackets. Let them cool and then peel. Finely chop the onion, grate the carrots on a coarse side of the grater and fry in oil. Put the cooled buckwheat through a meat grinder and add the fried onions and carrots. After that grate the potatoes on a coarse side of the grater and add them to the buckwheat mixture. Season with salt and pepper according to your taste. Form small patties, roll them in breadcrumbs and fry in a little oil for 3-4 minutes on each side.
