The previous edit (which added both) was performed by an IP address located in Reims France, which is the location of the Oeno company. Thus, it is likely performed by someone working for Oeno, likely with the aim of using Wikipedia to promote their business and protect their brand image/trademark.

This section in particular seems to be extremely un-encyclopedic in both tone and content and I think it is unsalvagable. It has no citations, contains numerous weasel words ("it is discussed" "some authors" "several authors" etc ), addresses the reader directly as "you" and just generally reads like an essay rather than a wikipedia article. Hence, I am deleting it entirely.
